What it is

Scandinavian Cocktail Lab exists to promote, develop and grow Scandinavian cocktail culture.

It is a platform for exploring how local spirits, ingredients, food, people and places can come together in drinks that feel modern and distinctly Scandinavian.

Scandinavian spirits deserve a bigger platform.

Why now

Over the last two decades, the Nordic countries have built one of the most exciting food scenes in the world.

Chefs, restaurants and producers have shown that local ingredients, regional traditions and new ideas can create something both modern and recognizably Scandinavian.

The same thing is now happening with spirits.

Distilleries across Scandinavia are producing exceptional gin, whisky, aquavit, liqueurs and other spirits, often using local ingredients and traditions to create something unique to the region.

Cocktails are a natural way to bring those spirits, ingredients and stories together.

The approach

Not just Scandinavian versions of classic cocktails.

The aim is to explore what a Nordic cocktail can actually be.

Start with Scandinavian spirits and the people who make them.

Work with local berries, herbs, botanicals and seasonal ingredients.

Develop cocktails alongside food rather than treating them as something separate.

Use technique when it makes the drink better, not simply because it is possible.

Create ideas connected to a producer, a place or a story that could only have come from this part of the world.

More than cocktails

A way into the wider food and hospitality culture.

Someone might first discover a Scandinavian spirit through a cocktail.

That could lead them to the distillery that made it. From there, they might discover the region, the food, the restaurants and the people behind it.

Cocktails can be paired with food, developed with chefs and built around the same ingredients that appear on the plate.

That is where the idea becomes much bigger than the drink itself.

How it develops

The Lab is a place to test ideas honestly.

The work can begin through cocktail development, food pairings, stories, tastings, events and collaborations.

These formats make it possible to learn directly from bartenders, chefs, distilleries and producers while improving the ideas in real settings.

If a cocktail is built around a spirit from a Scandinavian distillery, that distillery should be part of the story. If an ingredient comes from a local producer, that should be part of the story too.

The goal is not to hide the source. The goal is to highlight it.

Vision

Give Scandinavian drinks a clearer place in the international culinary conversation.

The bigger picture is a stronger culture around Scandinavian cocktails, with more reasons to discover the region through its distilleries, bars, restaurants, ingredients and people.

Behind the Lab.

My name is Niclas Silver. I was born and raised in southern Sweden. I am a lifelong foodie with a deep passion for food and drink culture, and I have always been drawn to the experimental side of both.

For more than 15 years, I worked as a scientist across Scandinavia and the UK. That background taught me to stay curious, test ideas carefully and keep improving. It is the same mindset I bring to Scandinavian Cocktail Lab.

My experience also spans a range of entrepreneurial and creative ventures. I helped found an e-commerce brand and a nightclub events business, and have worked in music production and AI implementation for businesses. The Lab brings those different parts of my background together around what I care about most: food, drink, hospitality and experiences.
